Pineapple Cake

 
 

 

 

Taste and health benefits of Butter, Shortening (Crisco/Spry), and Lard are still hotly debated. Aunt Pit wasn't afraid of any of them.

cake

Pineapple Filling

mix 2 tablespoons cornstarch with 1/2 cup sugar

add 2 cups crushed pineapple (juice & fruit)

and 1 tablespoon lemon juice.

cook slowly till thick & clear

save 1/2 cup to decorate top of cake

cover top & sides of cake with double boiler icing.

Put 1 1/2 cups sugar
1/2 cup water and
2 egg whites
to cook over boiling water

beat till thick until icing holds a peak (about 7 minutes)

remove from heat

beat till thick enough to spread.

Cake

1/2 cup crisco
1 cup sugar
2 cups flour
3/4 cup milk
1 teaspoon salt
1/2 teaspoon flavoring
2 1/2 teaspoons B.P. [baking powder]
2 eggs

Aunt Pit often assumes that any idiot knows what to do with the cake ingredients. For those of us who don't:
Gather ingredients
Preheat oven to 350°.
Grease cake pan.
Mix wet ingredients in a bowl.
Mix dry ingredients in another bowl.
Combine wet and dry ingredients.
Pour batter into pan/pans.
Bake about 30 minutes until a toothpick inserted into the cake is dry.

 

 

A double boiler is a saucepan with a shallow pan that fits inside. The bottom pan is filled with water. Delicate ingredients are cooked in the top pan.
